‘Hatano’ located in Fujinoki, Iiyama City, Nagano, welcomes you with traditional Japanese cuisine, and all the charms of a secluded hideaway. The restaurant building is a 19th century, traditional Japanese private residence, fully renovated, yet retaining the aesthetics of the original architectural style.

Served with seasonal vegetables, fish and meat, Hatano’s traditional course dinners are ‘washoku’, or traditional Japanese food, which is inscribed on the Representative List of the Intangible Culture Heritage of Humanity by UNESCO.
When you hear the word ‘washoku’, tempura or sushi might come to mind at first. It also includes, however, a type of course dinner called ‘kaiseki ryori’, which has its origins in the traditional and elegant style of serving dishes on legged ‘honzen’ trays, called ‘honzen ryori’. To fully enjoy a kaiseki dinner, it is customary to also partake in delicious Japanese sake. Moreover, what makes kaiseki so special is how the ingredients are prepared and cooked. Although not obvious by its appearance, highly advanced knife skills and special cooking techniques are imperative to kaiseki in order to fully bring out the flavors, colors and other characteristics of each delicate ingredient.
Aside from the exquisite food and charming atmosphere, another aspect of dining at Hatano appreciated by its customers is that food is served on beautiful antique dishes, including ones made around 200 years ago, as well as precious gold and silver lacquer dishes rarely found nowadays, which offer a uniquely traditional Japanese dining experience.

(旬の食材(野菜、魚、肉)を使った会席料理は、世界遺産となった日本の『和食』をご提供しています。一般的に和食と言うと『天ぷら』『寿司』とお考えになる外国のお方も多いと存じますが、日本には本膳料理の流れを汲む会席料理があります、一品ずつお酒と共に楽しむお料理で包丁の技、食材を活かす技が隠し味となっており、色彩豊かに繊細な食材を調理いたします。食事に使われる食器(古器)には200年ものの器も使われており、今では貴重な蒔絵が施されている器も眺めるのも日本の歴史を感じさせてくれる事と存じます。)

When I visited Hatano for the first time, I instantly felt that the tranquility was nothing short of special, and despite being Japanese and visiting countless kaiseki restaurants, I knew I would thoroughly enjoy my dining experience.
The entrance has an adjustable wicket door and a hard-packed dirt floor, and the dining rooms feature exposed pillars and beams, a hidden cupboard, sliding doors made of Japanese paper, and other items unique to old residences, which I found warm and inviting. Since it was a winter at the time, the region was blanketed in deep snow, absorbing sound and providing a wonderfully peaceful environment. The comforting warmth of the woodstove, along with the quiet atmosphere gave a true sense of serenity.

私が最初に訪れた時に感じた事は、日本人である私が感動する静寂の期間と空間が流れていた事でした。
可動式のくぐり戸と三和土、そして古民家らしい内部の柱、梁、隠し戸棚や和紙の引き戸等をそのままに活かしたお部屋と空間に心和むひとときを体験できた事です。最初にご訪問したのが雪深い季節であったこともあり、雪の壁で音が遮断された音のない空間と薪ストーブの温もりが心地よく、ストーブの灯火にも心寛げるお部屋に笑顔が出てしまいました。

Every one of the delicate and artful kaiseki dishes ensured I will most definitely visit Hatano again, whether it be lunch or dinner. I strongly recommend you visit this kaiseki restaurant, to enjoy its amazing food, relax in its warm and peaceful atmosphere, and take a step back in time and experience a more traditional and elegant Japan.

■Message from the chef
Surrounded by a rich and natural environment, the Shinshu area has a wide variety of delicious foods. For this reason, I decided to establish a restaurant here, and I take pride in using mainly locally sourced ingredients in our dishes. Whether visiting from afar or from neighboring areas, please enjoy the unique tastes Shinshu has to offer, as well as appreciating the health benefits of traditional cuisine. Above all, you are what you eat!
As a chef, I deeply appreciate having the chance to prepare and cook for you with delicious local food, collected from wild mountains and pure streams.
Gibier, or game meat, dishes are gaining in popularity here in Iiyama. My dream as a chef is to not only prepare, cook, and serve game meat dishes to my customers, but to also go out and hunt the game myself. Furthermore, to be able to create dishes only from what I can gather myself, to make kaiseki cuisine only with fresh and delicious seasonal foods, whose quality I check by myself would be perfection for me as a chef. Fortunately, there is a special food safety management facility exclusively for game meat here in Iiyama. The dream is, therefore, not just a dream. What an honor it is to be a chef!

里山の恵まれた食材を多く使い健康な食事をしていただきたいと考えてこの地にお店を構えました、遠方からお越しいただくお客様に感謝の心を込めて、信州の食材を使い、また近隣の方々には、地元の旬の食品や伝統食が身体に良い(身土不二)の心を配れたらと思っております。
田舍の風景の中、遠方よりお出かけいただけるお客様に感動していただける料理を提供できたら自身にも幸せな事かと考えています。この自然に恵まれた山と清流の里にて収穫できるものを提供できる喜びに感謝しています。
ここ飯山でジビエ料理が広まろうとしている中で、私も調理するだけではなく狩りに出掛け自分で獲ったものをお客さまに提供するという形がとれたら最高ではないかなと思います。料理人である以上、食材を自分で調達して、調達したものを調理し提供することが最高だと思います。飯山にはジビエの衛生管理場もありますので、新鮮なものを自分の目で確認して、その季節にあった旬の食材と組みわせた会席料理を作れたらと考えるだけでも様々な想いが巡り今の私自身のやりがいでもあり、楽しくて幸せな日々にも感謝しています。
