Some of the tableware (antique) used in our dishes is as old as 200 years old. At Hatano, we are as particular about the tableware for our dishes as we are about the ingredients we select tableware that you will enjoy using.

We opened our restaurant in this location to provide healthy dining using the rich ingredients from the vicinity mountainous region. To guests who traveled a long distance to be here, we show our gratitude by using ingredients from Shinshu, and to those who came from a nearby region, we will provide you with locally produced seasonal and traditional food that is great for your health, as the saying goes: You are what you eat.
With the growing popularity of wild game cuisine here in Iiyama, I think it would be best if I could not only cook but also head out and hunt and serve customers what I have caught. As a chef, I think the best thing I can do is to procure the ingredients myself and cook and serve what I have procured. We have hygiene regulations for wild game meat in Iiyama, so just thinking about making Kaiseki cuisine with fresh ingredients I see with my very eyes and seasonal ingredients that best match the occasion is enough to trigger all sorts of feelings in me. It is very rewarding to me right now, and I’m grateful for these fun and happy days.

To have guests experience an even more fulfilling time at our restaurant, we explain every dish in detail as we serve them.
